Recipe: Winter Chops

Grilling outdoors ain’t for every one at this time of year so here’s one you can do on the grill or in a frying pan.

Grilled Lamb Chops


6 lamb chops

4 large garlic cloves (add more if it’s not that strong)

Table spoon of fresh rosemary

Tea spoon of fresh thyme

Pinch cayenne pepper

1 red chilli whole don’t bother to take the seeds out

Sea salt (I recommend Maldon)

Black pepper

Glug of olive oil

In a food processor or pestle & mortar add all the ingredients, pulse or mash into a paste, rub into chops place, them in a resealable plastic bag and squeeze out all the air.  Place in fridge to marinade for at least an hour then remove,  allow to come up to room temperature then grill or fry serve with splash of fresh lime juice and salt to taste.
